Daft question: You do realise that UFS is simply one of a remarkably
large selection of filesystems available in the Unix (tm) world?
If you don't, you could start with the relevant bit of the (somewhat
dated) Linux System Admin Guide:

Then maybe you proceed to pick your favourite Linux Kernel book and
read the filesystem chapter in that. E.g.
http://www.linuxhq.com/guides/TLK/fs/filesystem.html (again rather
dated but it's easy to find; you'd likely be better off with something
based on the 2.6+ kernel)
And if you still have questions, there's mailing lists, and there's
the source.
If you did specifically mean UFS e.g. as used in Tru64 I can't think
of (or quickly find) much apart from the relevant chapter of the Tru64
System Admin Guide eg http://h30097.www3.hp.com/docs/base_doc/DOCUMENTATION/V51_HTML/ARH9FCTE/FLSMNTCH.HTM
- or if you have money to burn there is the "Tru64 UNIX File System
Administration Handbook" by Steven M. Hancock. These are also rather
dated (obviously!).
