Having logs showing delivery attempts for emails you have processed in
invaluable. Recently, I was asked to prove I had served all parties in a
CRTC proceeding with a document, and within minutes, I was able to
provide the logs showing delivery to all but 4 on first attempt, and 2
more an hour later, and 2 with hard failure after a week.
(CRTC is canada's equivalent to the US FCC).
Also, having your mail stored in house on an IMAP server allows multiple
machines to access you mail (main desktop, laptop, ipod etc).
