The first thing I would do in the absence of any other idea is to put
wireshark on the network to see what's actually happening. Sounds like
some sort of timeout problem to me, but what do I know, not having used
vms for years. Have had a few nfs problems over the years, data loss
etc, but nothing like that. Also, try to find out what process is
using all the cpu time with process tools. top is good if you can find
a copy that will run on vms.

Alternatively, get a linux box and have it set up in less than an
hour. (Ok, sorry, smacked hand :-)...
