I seem to remember there is a setting which inverts the Fn-key function,
so that you get the F<n> by default, and the volume and whatnot
functions by holding down fn.

Are you sure? Because the system default is to have F10 bound to
exposé... ;-)
So, if you are using system defaults, F10 will be bound.
