You make some choices. You chose a distro. Ubuntu is not as conservative
as some other distros about taking newer versions of software. And
you have the option of choosing what to install.

There are probably way more.
But remember what a Linux update is. It is much more than an update
of the OS. It is an update of all applications distributed via
that particular Linux provider. It is usually thousands of
applications.
So you get updated your browsers, your email clients, your web server,
you database servers, your Java etc..
