It is also used in file names in installation kits.

Some name conversion will be needed.

Itanium -> x86-64

seems very natural to me.

I64 -> ?
IA64 -> ?

It may be considered heretic but I think X64 would be fine.

3 letters, no special characters and thanks to Microsoft most
people will understand what it means.
