Copyright does not disappear just because the
copyright notice get removed.

You need to explicit grant him rights.

And if you pick your own  wording then it will be bad because
he will need to pay a lawyer big bucks to review it.

If you use a recognized permissive open source license: Apache,
BSD, MIT etc. then everybody should be happy.
