Colour is used all over the place to enhance the display of information.

Some examples off the top of my head:

1) Have you ever done anything with 3270 displays ? The panels shown on
3270 displays use colour to good effect on text based output to enhance
the display of information.

2) Do your rocket control/telemetry systems use colour to enhance the
displays ? I know the UAV style model aircraft ground control systems do.

3) Maps are colour coded and use those colours to highlight information.

4) Magazines/books/etc do use colour to enhance the display of information,
especially in graphs and tables.
