It's like expecting a camera to take a picture of you and not show the logo 
on your t-shirt in the image.

An image copy is a functionnally equivalent copy of the source. If you want 
to exclude files do not use /image but rather, [*...]*.*.* /exclude=(), or 
delete the files after you do the image restore (like you would use 
photoshop to remove the logo on your picture).

The command should probably return this message, though
%DCL-W-CONFLICT, illegal combination of command elements - check 
documentation
