As Chris W says, Ubuntu's Unity interface is the subject of much, er, 
discussion.  It is also quite demanding on the graphics side of things, 
so if you want to try it out on that older box you have spare, you might 
well be out of luck.

I tried SUSE a decade or so ago, but each major release had me going off 
to buy new graphics cards and/or NICs, which rather put me off.

I found OS X a good route into understanding Unix.  I could use the GUI 
to get work done and then use the CLI to learn the underlying Unixy 
things at my own pace.
