I like EIGHT_BIT; almost all email is 8-bit clean now.

I like HEADERS; less distraction when browsing through messages in a 
folder.

Strictly speaking, not necessary, but in practice, many people will 
accept email only if it comes from a trusted source.  Blame the 
spammers.  Also, make sure your ISP allows outgoing email.

Not the problem here, but read up on them.
