I've been running them for that way for years now.  As have other folks.

There are folks that are running RAIS configurations, which I haven't tried.

These days, it can commonly be one application per VM guest.

Fixed costs for hardware are higher, when you're running 
potentially-idle dedicated servers, after all.

If you need more than the included RAID-1 on a pair of 500 GB or 750 GB 
(and easy access) internal drives, yes, it would; to Thunderbolt, USB, 
FireWire, Fibre Channel, etc.
