FC SAN adapters are available for the Apple laptops and Mac Mini boxes
via Thunderbolt, FWIW.
There are also external PCIe card cages available via Thunderbolt, for
those with fairly gonzo I/O requirements.

I haven't had any issues acquiring zx2000 servers, for cases were those
boxes were a good solution for the particular situation. Your
experience might simply indicate not all that much interest in the
swap, or possibly in Itanium gear, or in VMS gear in general, or there
might not be all that many zx2000 boxes around to swap. Who knows. I
do know of some folks that have been swapping AlphaServer DS20e and
AlphaServer ES47 gear and even terminals around within Europe, but
AFAIK they're not usually looking for Itanium servers.
