I wonder if adding the AirPrint gateway that I mentioned might let my 
macOS Big Sur talk to my old printer.

Oy vey!  IM(ns)HO multi-function devices devices are the devil!!!

If you do want scanning support, be mindful that just because the 
printer has a network interface does not mean that the scanner will work 
across the network.  --  I've run into more than one multi-function 
device that would print perfectly fine across the network which required 
a USB cable to be able to scan from the computer.

Note:  There is a difference in having the multi-function device scan 
and send the file / email somewhere else.  (Different devices support 
different protocols; SMTP, NFS, SMB) and being able to open the cameras 
and scanners application (or whatever it's name is) and initiate a scan 
there.

Agreed.

For a long time, the only reason I went with inkjets / bubble jets was 
for color.  Now with color laser printers being obtainable for a 
reasonable price, I have virtually no use for ink / bubble printers.
