I don't think you have the right idea about the i2000.
It's quite big and heavy (like 40kg), much slower than
an Itanium2 based system and one of the most unreliable
systems - judging only the hardware - I have ever seen 
in my life. Yes, I do explicitly include the late and fast
Merced CPUs in that judgment. It's a collectors item
with no real advantage today. I really prefer my zx6000.

If you are seriously consering an i2000, you might hunt
for any of the other OEM boxes from IBM, Dell, SGI or Fu-Si.
They are all the same system. The graphics card is
sometimes different, but those machines aren't good for
graphics anyway.
I can't say anything about running VMS on those machines.
They run HP-UX reasonably well if you can live with
11.22. You won't get an X server though. Back when
Itaniums weren't as common, it was pretty cool to run
PA-RISC binaries on an Itanium.

I am also not sure if 8.1 would run on an i2000. I think
HP recommended either an rx2600 or rx4640.
